Keto//Gluten Free Pillow Soft Coconut Cookies dipped in Chocolate Gold Nugget Ghee

These little treats are absolutely delicious! It may seem like there is a bit too much effort to whip up a batch, but it really only takes about 20 minutes.

They have a soft texture with a little chew from the shredded coconut and dipping it in this amazing chocolate ghee makes them absolutely irresistible! They are very low in carbs, only 1g Net carb per cookie. The only problem is having just a couple! These are perfect with an afternoon coffee, or just a quick snack to satisfy that sweet tooth you know what I mean?

The method is not your traditional cookie method. The dough is a pate a choux like dough, or a cream puff dough. Using almond flour, coconut flour, a touch of psyllium husk and xanthun gum. The texture will be firm but very soft. We will not be able to achieve that crunchy exterior that you would typically get from a pate a choux dough made with flour, but trust me, it won't matter here. 

I used Chocolate Honey Gold Nugget Ghee to dip the cookies in after they were cooled, and this final touch makes these even more special! The ghee is absolutely delicious! Low in carbs and full of delicious healthy fat, it almost makes these cookies a fat bomb. Do you need any other reasons to make these?

Keto//Gluten Free Pillow Soft Coconut Cookies dipped in Chocolate Gold Nugget Ghee - (18 servings)

What you will need:


  1. Pre-heat oven to 325F. Add water, butter, sweetener and salt to a pot and bring it all to a simmer.


  2. In a bowl mix almond flour, coconut flour, psyllium husk flour, shredded coconut, xanthan gum. Add it to the simmering liquid and mix it all in until it comes together into a dough. Cook this dough down for about 5 minutes until it is not sticking to the pot anymore. Let it cool in a bowl.


  3. Once the dough has cooled for a little bit (no steam coming off of it) add in the egg and the egg white and mix it all in white a hand mixer. This final dough will be very sticky.


  4. Line a baking sheet with parchment paper. Add this final dough into a piping bag and pipe out the cookies into the baking sheet in whatever shape you would like! I used a start tip but this is not a requirement. Just wanted to make them extra pretty :)


  5. Bake them in the 325F for about 15-20 minutes. This will depend on your oven, so just keep an eye on them. Once they turn golden brown, they are done.


  6. Let them cool to room temperature. Melt the gold nugget ghee and dip the cookies in it. Put them in fridge to harden and done!


If you do not have some Chocolate Honey Gold Nugget Ghee in hand, I would first recommend that you get some! it is seriously delicious! Alternatively, you can use your preferred sugar free chocolate melted.
