Keto//Gluten Free Pillow Soft Coconut Cookies dipped in Chocolate Gold Nugget Ghee

These little treats are absolutely delicious! It may seem like there is a bit too much effort to whip up a batch, but it really only takes about 20 minutes. They have a soft texture with a little chew from the shredded coconut and dipping it in this amazing chocolate ghee makes them absolutely irresistible! They are very low in carbs, only 1g Net carb per cookie. The only problem is having just a couple! Keto//Gluten Free Orange Flan (Low Carb Orange Pudim)

This dessert is very close to my heart! I grew up eating it and it is very traditional in any Brazilian gathering and holidays. Known to us as "Pudim de Leite", it is traditionally a custard made with sweetened condensed milk and cooked in bain-marie. There are different versions of this dessert in different countries and here in the U.S it is more popularly known as flan.  The process of making this flan is very simple! For the flours I used a mixture or almond flour, coconut flour and golden flaxseed meal. If you do not have golden flaxseed meal, you can skip it and use only the...

Keto//Gluten Free Key Lime Custard and Key Lime Cheesecake

This keto custard couldn't be easier to make! Tangy, sweet, creamy and it takes very simple ingredients you most likely already have in your kitchen. I had made lemon custard a couple of weeks ago and achieved a great texture, but decided to make a few changes to the recipe and tried it again with key lime and it turned out absolutely perfect!   This custard is so versatile! I like it on its own, as a dip for some sweet strawberries, but you can also use it as pie filling and even as a base for some no-bake cheesecake. I of course, had to make all of the above to try it. And it was all approved by the...
